What better way to enjoy Summer, than to sit back with a chilled, refreshing, icy cocktail in hand? Let us tell you… with the silence of your kids as they sip on a mocktail!
Here are some of our summer favourites.
Watermelon Margarita / Mockarita
250ml tequila (½ lime cordial concentrate, ½ soda water for Mockarita)
500g cubed watermelon (seeds removed)
6 tbsp fresh lime juice
Sea salt to line the rim of the glass (optional)
Lime slices and mint to serve
Simply blend your watermelon flesh until pureed, then combine with tequila (or Mocktail mix), lime juice and ice in a cocktail shaker. Shake like mad, then serve in a salt-rimmed glass with a slice of lime and a sprig of mint.
Mojito / Mockjito
250ml light rum (½ apple juice ½ soda water for Mockjito)
7 tbsp fresh lime juice
4 tbsp sugar
15 fresh mint leaves, roughly torn
Lime slices to serve
Add all ingredients except for the soda water and lime slices to cocktail shaker. Shake like crazy, then serve over ice and top with a splash of soda water. Garnish with a slice of lime.
Mimosa / Mockmosa
500ml Prosecco (lemonade or soda water for Mockmosa)
500ml Freshly squeezed orange juice
Firstly, make sure you work with chilled ingredients for your Mimosa/Mockmosa. Always add the sparkling wine (or lemonade/soda water) first, then top with the orange juice. Mimosa’s always work best in a champagne flute which will retain the bubbles.
