Easter Egg Cookies

Everyone loves the classic choc chip cookie, but have you considered adding to your favourite choc chip cookies with delicious Easter eggs? Yum! Don’t say we didn’t warn you… once you have tried these simple and delicious cookies you will be addicted!
1 cup softened butter
1 cup sugar
1⁄2 cup brown sugar
2 tsp. vanilla essence
2 3/4 cups flour
1 tsp. baking soda
2 cups dark chocolate chips
1-2 cups mini Easter eggs
Preheat oven to 180°C. Line two baking trays with baking paper.
Combine butter and sugar until smooth and you can’t see the grains of the sugar. Add in the eggs and vanilla essence.
In a separate bowl, sift and combine the flour, baking soda, cinnamon and salt. Combine with the wet ingredients, before adding in the chocolate chips.
Set the cookie mixture out in small balls, approximately 3-5 cm apart on your baking tray. With a fork dipped in flour, gently press your cookie dough down into biscuits. Press on 2-3 Easter eggs on top of each cookie.
Bake for 10 minutes, watching closely to ensure that your cookies don’t burn. If you need to, rotate your trays at the half way mark.
Remove cookies from the tray and let cool on a rack… if you can wait that is!
