32 wonton wrappers
¼ cup olive oil
2/3 cup lite sour cream
2tbs tomato sauce
3 tsp Worcestershire Sauce
1 tablespoon lemon juice
24 cooked small king prawns, peeled ,de-viened
2 large avocadoes, peeled, diced
5 Iceberg lettuce, shredded
1. Preheat oven 180/160 degrees fan forced. Brush both sides of 12 wonton wrappers with oil. Ease wrappers into a twelve hole, 1/3 cup capacity muffin pan. Bake for 7-10 minutes or until golden and crisp. Transfer to a wire rack to cool completely. Repeat with remaining wontons and oil.
2. Combine sour cream, tomato sauce, lemon juice and salt and pepper in a bowl. Mix until well combined. Roughly chop the prawns and add to the sour cream mixture with the avocado. Toss gently to coat.
3. Place wonton cases onto a serving plate. Arrange a little lettuce in the bottom of each. Spoon over prawn and avocado mixture. Season with pepper and serve immediately.
